I'm in love with egg tarts. This is the reason why I started to try out baking Hong Kong egg tarts from the scratch. Everyone ask why I make my own crust for the egg tart shell. I replied them, learning always starts from the basic. I discovered the different stages of flaky egg tart shell is due to the amount of butter. Whenever I go for dim sum, egg tarts is always the first to order. Egg tarts is very simple to bake. You just have to find the right recipe.
Let's start our lesson for today. Prepare all the important ingredients and tools for baking.
- Aluminum egg tart shell
- 2L cups to contain the egg filling mixture
Ingredients
Crust
- 200 grams - All purpose flour
- 1/8 teaspoon - Salt
- 1 tablespoon - Sugar
- 200 grams - Unsalted butter
- 2 tablespoon - Cold water
Egg fillings
- 3 - eggs
- 1 cup - Hot water
- 1/2 cup - Evaporated milk
- 3/4 teaspoon - Vanilla essence
1. Prepare the crust. In a mixing bowl, pour in the flour, salt, sugar. Add in butter, add cold water to bring the dough together. Cover the dough and refrigerate for 20 minutes.
2. After 20 minutes, take the dough out and place it onto the floured board. Roll the dough and cover it. Chill for 30 minutes.
3. Prepare the egg filling while waiting for the dough. Dissolve the sugar in hot water and allow it to cool to room temperature. Mix the eggs and evaporated milk together and add in sugar water and vanilla.
4. Preheat the oven to 180 degrees Celsius for 15 minutes. Prepare the dough on the aluminum egg shell. Fill the 3/4 egg filling into the shell. Bake at 180 degree Celsius for 15 to 20 minutes.
Allow the egg tarts to cool and enjoy while hot. Cheers!
