SheilaBakery ~ Chiffon Cake

Today, i will shared with you Chocolate Earl Grey Chiffon Cake. I brought the tea leaves from TWG. TWG have more than 100 types of tea leaves available for purchase. Earl grey is my fav tea leaves. I choose chocolate earl grey tea leaves. Fragrant of earl grey with the combination of chocolate.
Recipe is simple and easy. Preparation time approximately 25 mins, 30 mins cooking time.

Ingredients:

3g                    Chocolate earl grey loose tea leaves

5g                    Chocolate earl grey loose tea leaves

90 ml             Hot Water

3                      Eggs

85g                 Sugar

40ml              Vegetable oil

75g                 Cake flour

3g                    Baking powder


Instructions:
  1. Put 3g of Earl grey loose leaves into a food processor and grind to fine powder.
  2. Another 5g of Earl grey loose leaves, place them into a fine sieve over a bowl of 90ml hot water. After cooling, only use 60 ml of Earl grey tea.
  3. Separate the eggs yolk and whites.
  4. Whisk 3 egg yolks with 55g of sugar.
  5. Add 40ml of vegetable oil, 60ml of tea and whisk all together.
  6. Add in the powedered Earl Grey tea into the mixture and mix well.
  7. Sift 75g cake flour and 3g baking powder into the egg mixture. Whisk them completely and ensure no lumps.
  8. Pour the egg whites into a stand mixer and whip the egg whites till opaque and foamy. Add in remaining sugar and continue to whip. To check on stiff peak, pull up the whisk and see a peak form.
  9. Pour in 1/3 of egg whites into the batter until the mixture is homogeneous.
  10. Fold in the remaining egg whites and mix gently until homogeneous.
  11. Pour the batter into the chiffon cake pan.
  12. Bake for 30 minutes. And you are ready to eat it.
